I would also imagine that fresh produce would be the standard although I sometimes see data for frozen and canned products.

I think when we look at nutrition facts for a particular food, they are fairly accurate on average but even within one type of produce like "spinach", there is likely a lot of variability in key nutrients depending on the storage time after harvesting and the nutrient density of the soil.
